Pumpkin Pancakes {Vegan}

Ingredients
- 2-1/3 C Bisquick Baking Mix yes, it's Vegan!
- 1/3 C Canned Pumpkin NOT pumpkin pie mix
- 1-1/4 C Almond Milk
- 1/4 C Vegetable Oil
- 2 Tbl Vegan Sugar
- 1 tsp Pumpkin Pie Spice
- 1/2 C Silken Tofu blended until smooth
Instructions
- Combine all ingredients until smooth.
- In a non-stick skillet or griddle, heat to medium high heat. Brush a small amount of vegetable shortening onto the hot surface to prevent sticking.
- Ladle onto the prepared skillet or griddle and cook until some bubbles appear and the edges start to form. Once golden, flip and continue to cook until the other side browns.
- Serve with vegan syrup.
