Old Fashioned Molasses Cookie

Old Fashioned Soft Molasses Cookies {Vegan}


  • 2-1/2 C All Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/4 tsp Salt
  • 1/2 C Vegetable Shortening such as Spectrum Naturals or Earth Balance Baking Sticks
  • 1/2 C Brown Sugar packed
  • 1/2 C Molasses
  • 1 tbsp ground Flax Seeds mixed with 3 tbsp Water place refrigerator 15-30 minutes
  • 1 tbsp Water
  • 1 tbsp Apple Cider Vinegar
  • Coarse vegan sugar for sprinkling


  • Preheat oven to 375 degrees.
  • In the bowl of an electric mixer, place all of the ingredients and mix until combined.
  • On a floured surface, roll dough to either 1/4" or 1/2" thick. I did the 1/4" but would definitely do 1/2" thick next time to be more like the original.
  • Place cutouts on a parchment or Silpat lined baking sheet.
  • Sprinkle with coarse vegan sugar, if desired.
  • Bake for 7-10 minutes (based on thickness). The edges should just start to firm up. Allow to cool for 2 minutes on the cookie sheet and remove to a rack to cool.
  • Serve with vegan margarine and a cup of your favorite tea.
