Preheat oven to 375 degrees.
In the bowl of an electric mixer, place all of the ingredients and mix until combined.
On a floured surface, roll dough to either 1/4" or 1/2" thick. I did the 1/4" but would definitely do 1/2" thick next time to be more like the original.
Place cutouts on a parchment or Silpat lined baking sheet.
Sprinkle with coarse vegan sugar, if desired.
Bake for 7-10 minutes (based on thickness). The edges should just start to firm up. Allow to cool for 2 minutes on the cookie sheet and remove to a rack to cool.
Serve with vegan margarine and a cup of your favorite tea.
