Vegan Sugar Cookies
adds so much more flavor, but if you don't have it, just add another 1/2 tsp of vanilla
such as: 1/4 C vegan sour cream, 1/4 C canned coconut milk, 1/4 cashew cream
All Purpose Flour
Preheat oven to 350 degrees
Cream the vegan margarine and sugar together.
Add the remaining ingredients and beat until well-blended.
On a lightly floured surface, roll to 1/4" thick and cut out shapes, placing on a prepared baking sheet. I like to use a silicone baking sheet.
Bake for 5-8 minutes. Don't let the bottoms get brown and allow to cool on the cookie sheet before removing.
Allow to cool completely prior to decorating. Store covered at room temperature.
