Vegan Sugar Cookies

  • 1 C Vegan Margarine
  • 1 C Vegan Sugar
  • 1 tsp Vanilla
  • 1/2 tsp Almond Extract adds so much more flavor, but if you don't have it, just add another 1/2 tsp of vanilla
  • 1 Egg-Subtitute such as: 1/4 C vegan sour cream, 1/4 C canned coconut milk, 1/4 cashew cream
  • 1-1/2 tsp Baking Powder
  • 3 C All Purpose Flour


  • Preheat oven to 350 degrees
  • Cream the vegan margarine and sugar together.
  • Add the remaining ingredients and beat until well-blended.
  • On a lightly floured surface, roll to 1/4" thick and cut out shapes, placing on a prepared baking sheet.  I like to use a silicone baking sheet.
  • Bake for 5-8 minutes.  Don't let the bottoms get brown and allow to cool on the cookie sheet before removing.
  • Allow to cool completely prior to decorating.  Store covered at room temperature.
