Carrot and Apple Latkes {Vegan}

Ingredients
1
small Apple
peeled, core removed and grated (try to avoid tart/bakingvarieties, these should be sweet)

large Carrots
peeled, ends trimmed and grated
1
small Onion
skin removed, ends trimmed and grated
Garlic or garlic powder
optional
Juice of 1/2 a Lemon
1/2
tsp
Salt
1/8-1/4
tsp
Pepper
to taste
Spices such as cinnamon
allspice and ginger, optional
1
Tbl Ground Flax Seed + 3 Tbl Water
allow to sit for 10 minutes to thicken

heaping Tbl of Flour
any flour will do
Instructions
Before you begin, prepare the flax "egg" so that it has time to thicken and become somewhat gelatinous. Set aside.
Using the shredding attachment of a food processor, shred the onions, apples and then carrots.
Remove to a large mixing bowl.
Add the remaining ingredients and mix very well. Don't forget to add in that flax egg!
Preheat a large saute pan over medium to high heat and add oil.
Using an ice cream or other scoop helps to keep them all about the same size.
Form in your hand, using slight pressure to compress and shape into patties. The thinner the patty, the crisper the latke.
Cook for a few minutes on one side until golden and flip, cooking for a few more minutes.
Remove to a paper towel lined plate to blot up excess oil. They will firm up slightly as they rest but will still be somewhat soft in the center.
Serve warm with vegan sour cream and/or applesauce.
This recipe made about twelve 3" latkes.
