Vegetable Stew over Rice {Vegan}

Ingredients

medium Onion
peeled and sliced

medium Zucchini
chopped into 1"

medium Yellow Squash
chopped into 1"

.Mushrooms
cleaned, stems removed and quartered

handful Fresh Green Beans
cut into 1"

. can of Crushed Tomatoes
Oil for sauteeing
Salt
to taste
Pepper
to taste
Garlic Powder
to taste
Instructions
In a large stock pot over high heat, add a small amount of oil. I used about 2 tsp.
Add the onions and saute until translucent.
Add the mushrooms, zucchini, green beans and squash.
Saute until semi-tender.
Add the crushed tomatoes and reduce the heat.
Season with salt, pepper and garlic powder. Feel free to customize seasonings to your taste.
Cover and simmer for about 30 minutes or until tender.
Re-season with salt and pepper.
Serve over rice.
