Savoy or Green Cabbage, sliced very thin

Red Cabbage
Purple, sliced very thin

medium Carrot
shredded

small Red Bell Pepper
julienned

small Yellow Bell Pepper

small Green Bell Pepper

Green Onion

FOR THE DRESSING:
1-1/2
Tbl White Wine Vinegar
1
Tbl Agave Nectar
or more to taste

Tbl vegan Sour Cream
or homemade alternative
1-1/2
tsp
vegan Mayonnaise
or homemade alternative
1/2
tsp
Dijon Mustard

Tbl plus 2 tsp Olive Oil
Instructions
Prep all of the vegetables.
Whisk together all of the dressing ingredients.
Fold everything together and ideally, allow to sit covered in the refrigerator for at least 30 minutes.
Taste for seasoning and add salt or pepper as needed.
Garnish with green onions and/or fresh parsley.
