Meatless Monday: Vegan Red Beans and Rice

Ingredients

  • 1/2 Onion diced
  • 1 Celery Stalk diced
  • 1/4 Red Bell Pepper diced
  • 1 15 oz . Can Red Kidney Beans do not drain
  • 1 C Diced Tomatoes do not drain
  • 8 oz . Can Tomato sauce
  • 1/4 C Water
  • 3/4 C Instant Brown Rice uncooked

  • TO MAKE THE CAJUN SPICE BLEND:
  • 1 tsp Salt
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Paprika
  • 1/4 tsp Onion Powder
  • 1/4 tsp Oregano
  • 1/8 tsp Thyme
  • 1/8 tsp Black Pepper

Instructions

  • In a large saute pan over medium high heat, place 1 Tbl of oil and the diced onions, celery and red pepper. Saute until tender.
  • Meanwhile, prepare the spice blend. Alternately, you could simply use about 1 Tbl Cajun seasoning.
  • To the cooked vegetables, add the undrained kidney beans, diced tomatoes, water and tomato sauce.
  • Add the spice blend and stir to combine.
  • Add rice, bringing to a boil. Reduce heat and cover, cooking for 15 minutes or so until rice is tender. Let stand for an additional 5 minutes off heat. The mixture will continue to thicken.
