So Delicious Dairy Free Ice Cream Dessert {Vegan}

Ingredients

  • 1 container of SO Delicious Coconut Milk Oregon Mixed Berry Frozen Dessert
  • *
  • FOR THE GRAHAM CRACKER CRUST:
  • 1/2 C Pretzels
  • 1 C Graham Crackers
  • 1/8 C Granulated Sugar
  • 4 Tbl Vegan Margarine melted
  • *
  • FOR THE YOGURT TOPPING:
  • 2 oz . Vegan Cream Cheese
  • 2 Tbl Powdered Sugar
  • 1.7 oz JELLO Vanilla Pudding 1/2 a packet
  • 1/2 tsp Vanilla
  • 1/2 C Vegan Vanilla Flavored Yogurt
  • OPTIONAL: 1/2 of a container SO Delicious CocoWhip

Instructions

  • Take the ice cream out of the freezer and let thaw until it's just a bit stiffer than soft serve.
  • In the bowl of a food processor, combine the pretzels, graham crackers and sugar. Pulse until fine crumbs and then add melted butter.
  • Press the crumbs into the bottom of desired baking dish. Set in the freezer while you make your filling.
  • Spread the softened ice cream into an even layer on top of the graham cracker crust. Return to the freezer.
  • Meanwhile, combine all of the ingredients for the frozen yogurt topping. Spread in an even layer on top of the ice cream layer.
  • Freeze for at least 4 hours or overnight.
  • When you are ready to serve, allow to thaw for about 10-15 minutes.
  • Garnish with fresh fruit.
