Red Velvet Sandwich Cookies {Vegan}

Ingredients

  • FOR THE COOKIES:
  • 1 C All Purpose Flour
  • 1 Tbl Cocoa Powder
  • 1/4 tsp Baking Soda
  • Pinch of Salt
  • 6 Tbl of Vegan Margarine softened
  • 3/4 C Powdered Sugar
  • 1/2 tsp Vanilla Extract
  • 1 tsp Vegan-Friendly Red Food Coloring
  • FOR THE FILLING:
  • 3/4 C Shredded Coconut
  • 4 oz . Vegan Cream Cheese softened
  • 1/3 C Powdered Sugar
  • Pinch of Salt
  • 1/2 tsp Vanilla Extract

Instructions

  • To make the cookies, whisk together the flour, cocoa,
  • baking soda and salt.
  • In the bowl of an electric mixer, beat the margarine, pow-dered sugar and vanilla until smooth. Reduce speed, add flour mixture and beat until combined. Add the red color-ing and beat until well incorporated. Transfer to a lightly floured surface and knead with hands a few times. Roll in-to a log 2” in diameter. Wrap in plastic wrap and freeze for about 30 minutes or until firm enough to slice.
  • Meanwhile, combine all of the filling ingredients in a food processor. Preheat oven to 350 degrees. Prepare baking sheets with parchment or use a silpat to prevent sticking.
  • Slice dough into 1/4” disks and place 1” apart. Bake for 8-10 minutes. Let cool for a few minutes on the baking sheet and transfer to a wire rack to cool completely.
  • Spread the filling on the flat side of the cookie and sandwich with the remaining cookie.
