Cucumber Salad with Pickled Onions

Ingredients

Large Cucumbers
English are best as they contain less seeds, thinly sliced

Tbl Rice Vinegar
2
Tbl Grainy Dijon Mustard

tsp
Sugar

tsp
Salt
1/2
tsp
Black Pepper
freshly ground

Small Red Onion
thinly sliced
1
Large Carrot
grated
1
Tbl Fresh Dill
Instructions
Combine the vinegar, mustard, sugar, salt and pepper, whisking until combined.
Add the sliced onions and let sit for at least 15 minutes (or overnight). You will know they are ready when they turn a bright red.
Add cucumber slices and grated carrot. Toss to coat.
Top with fresh dill.
