A take on the original Pasta Primavera, this one uses orzo and couldn't be easier! You can mix it with any of your favorite vegetables and top with vegan parmesan. Light and delicious!

Ingredients
1COrzo
14oz.of Vegetable Broth
2-1/2Ctotal of mixed vegetables such as broccolicarrots, tomato, corn, edamame and green onions
Salt & Pepperto taste
1/2Tbl Vegetable Oil
Chopped parsley to garnish
Vegan Parmesan
Instructions
Cook the orzo in the vegetable broth according to the package instructions.
We used a cup of frozen broccoli, microwaved
In a saute pan, add the vegetable oil, carrots, diced tomatos, corn, edamame and green onions. Cook until tender. Season with salt and pepper, to taste.
Add orzo and broccoli to sauteed vegetables. Combine well and remove from heat.
Stir in parmesan and garnish with parsley, if desired.
