This simple, yet delicious cake comes from an old recipe card of my grandmother that I veganized. Like most grandparents who baked for their families, the card listed only ingredients ... and no instructions :) Luckily, this one is really easy. Slices of apple tucked into dough and topped with cinnamon sugar. So good served warm with a vegan vanilla ice cream.

4small or 3 medium baking applespeeled, cored & sliced

2Tbl Sugar

Preheat oven to 375 degrees.
Prepare an 8x8 baking pan with cooking spray.
Mix together the flour, baking powder, salt and sugar. Add the shortening, applesauce and milk and mix until just combined. Do not overmix.

Prepare the apples by peeling, coring and slicing

Sprinkle with the cinnamon sugar mixture.
Bake for 35 minutes or until a toothpick inserted comes clean. Cool slightly before serving.
