Soft Glazed Pumpkin Spice Cookie {Vegan}
These pumpkin spice cookies are soft and chewy with just the right amout of spice. The sweet frosting makes this a delectable dessert!

For the Cookie:

Vegan Butter
such as Earth Balance

Sugar

Canned Pumpkin Puree

Silken Tofu
Blended

Vanilla Extract
For the Frosting:

Powdered Sugar
Vegan

Tbl Almond Milk
1
Tbl Vegan Butter
such as Earth Balance

Instructions
Preheat oven to 350 degrees.
Combine flour, baking powder, baking soda, spices and salt.
In a mixer, cream together the 1/2 C butter and white sugar.
Add pumpkin, tofu and vanilla to butter mixture and beat until creamy. Add dry ingredients.
Drop onto cookie sheet by tablespoonfuls, flatten slightly.
Bake for 15-20 minutes and then cool completely.
Combine all ingredients for the frosting. Add a little extra almond milk if necessary to achieve the correct consistency.
