Chocolate Crackle Cookies {Vegan}
This cake-like chocolate cookie is coated with sugar and powdered sugar so that when it bakes, it crackles!

Instructions
In the bowl of an electric mixer, combine sugar, shortening and vanilla and beat on medium speed until well blended Add tofu and blend until fluffy.
Stir together flour, cocoa, salt and baking soda.
Gradually add shortening mixture, beating at medium speed just until blended. Stir in chocolate chips. Cover and chill for 2-3 hours until firm.
Preheat oven to 375 degrees.
Shape dough into 1" balls and roll first in granulated sugar and then directly into powdered sugar.
Place on a silpat or parchment lined baking sheet about 2" apart.
Bake for 8-10 minutes or until cookies are set. Cool 2 minutes on baking sheet and then transfer to a wire rack to cool completely.
