Instructions
Boil and cool the corn on the cob. Using a sharp knife, remove the kernels.
Prep all of the vegetables except the avocado and toss together.
At the last minute, dice the avocado and give a squeeze of lime.
Toss in some freshly chopped parsley (or cilantro) and serve immediately.
