Easy Baked Pumpkin Spice Oatmeal

Baked Pumpkin Spice Oatmeal {Vegan}

  • 1/3 C plus 1 Tbl Quick Cooking Oats you could use old-fashioned oats here, it just may take more baking time
  • 1 Tbl Sugar or sweetener of your choice
  • 3 Tbl Unsweetened Almond Milk
  • 1 Tbl Pure Pumpkin Puree not pumpkin pie filling
  • 1/4 tsp Baking Powder
  • Pinch of Salt
  • 1/4 tsp Pure Vanilla Extract
  • 1/8 to 1/4 tsp Pumpkin Pie Spice if you don't have it on hand, you can get my homemade pie spice recipe here
  • OPTIONAL: Chopped Walnuts


  • Preheat the oven (or toaster oven) to 350 degrees.
  • Combine all of the ingredients in a medium bowl.
  • Spray desired oven-proof serving dish with cooking spray.
  • Evenly distribute the batter.
  • Bake for 20-30 minutes (depending on the size you choose). It should be a soft muffin consistency and done to the center.
  • Allow to cool for a few minutes before serving.
  • NOTE: This makes 1 serving, but can be easily doubled, tripled, etc.
