Baked Pumpkin Spice Oatmeal {Vegan}

Ingredients

C
plus 1 Tbl Quick Cooking Oats
you could use old-fashioned oats here, it just may take more baking time

Tbl Sugar
or sweetener of your choice

Tbl Unsweetened Almond Milk
1
Tbl Pure Pumpkin Puree
not pumpkin pie filling
1/4
tsp
Baking Powder
Pinch
of Salt
1/4
tsp
Pure Vanilla Extract
1/8 to 1/4
tsp
Pumpkin Pie Spice
if you don't have it on hand, you can get my homemade pie spice recipe here
OPTIONAL: Chopped Walnuts
Instructions
Preheat the oven (or toaster oven) to 350 degrees.
Combine all of the ingredients in a medium bowl.
Spray desired oven-proof serving dish with cooking spray.
Evenly distribute the batter.
Bake for 20-30 minutes (depending on the size you choose). It should be a soft muffin consistency and done to the center.
Allow to cool for a few minutes before serving.
NOTE: This makes 1 serving, but can be easily doubled, tripled, etc.
