Harvest Salad with Pumpkin Vinaigrette {Vegan}

Ingredients

  • 1/4 Red Cabbage shredded in the food processor
  • 1/2 Head of Yellow Cauliflower processed in the food processor
  • 1 Large Carrot finely diced
  • 2 C Kale finely chopped
  • 1/2 C Sugar Snap Peas sliced on the diagonal

Instructions

  • In the bowl of a food processor, place the red cabbage and process until finely shredded. Don't go too far with it.
  • Empty the contents into a large bowl.
  • In the same food processor bowl (wiped clean), add the cauliflower (yellow, if you can find it) and process until the texture of rice. Do not overprocess.
  • Place into the bowl with the cabbage.
  • Finely chop the kale and dice the carrot.
  • Toss all to combine.
  • I sliced the sugar snap peas on the diagonal for added interest and just added those to the top. You could toss with the rest of the ingredients if you wish.,
  • Toss the salad with our Pumpkin Vinaigrette and top with our Spiced Candied Chickpeas.
