1largefresh Pineapple sliced in half, pieces cubed and cored
1Tbl Coconut Oilor other oil suitable for sauteeing
1small Oniondiced finely

1Carrotdiced
1/4CPeas
1/4CCorn
2CCooked Rice
1Tbl Soy Sauceor more to taste
1-1/2tspSesame Oilor more to taste
1/4tspFresh Gingergrated
All of the reserved diced Pineapple cubes along with any juicescores removed
2Green Onionssliced
Salt & Pepperto taste
Instructions
Using a sharp knife, slice the fresh pineapple from the leaf end to the base through its core. If the pineapple is ripe, this shouldn't be difficult.
Once split in half, use a knife to make slices in each direction to form the cubes.
Using a spoon, scrape out the center to make room for the rice, Some of the cubes will contain portions of the core. Just trim those away with a paring knife
In a large saute pan, add the coconut oil, onions and carrots.
Once those are tender, add the corn, peas and garlic.
Now add the soy, sesame oil and seasonings.
On medium high heat, begin to stir fry all of the ingredients together.
Add the pineapple and any juices last.
Taste for seasoning and add salt and pepper as needed.
