Black Bean Burger with a Chili Peanut Sauce {Vegan}

Ingredients
FOR THE BURGER:
1/2Medium Onion
1CloveGarlicMinced
1/4CCooked Brown Rice
1CBlack Beans
1Tbl Fresh Parsley
1-1/2tspFresh Gingeror to taste
1Tbl Peanutsoptional, chopped
1Tbl Flax Meal + 3 Tbl Waterrefrigerated for 10-15 minutes and whisked until gelatinous
Salt and Pepperto taste
Optional: Red Pepper Flakes

FOR THE CHILI PEANUT SAUCE:
1-1/2tspPeanut Butter
2-1/2Tbl Sweet Chili Sauceor to taste
1-1/2tspSesame Oil
1CloveGarlicminced

FOR SERVING:
1Tbl Peanutschopped
2Hamburger Rolls
Butter or Boston Lettuce Leaves
Instructions
Cook brown rice to package instructions.
Drain and rinse beans. If using dried, they must be soaked overnight prior to using.
In a small saute pan, cook the chopped onions in a very small amount of oil.
Add the onions and all other burger ingredients to a food processor. Reserve the saute pan for cooking the burgers.
Pulse the processor just a couple of times to get a coarse chop. You can also just use a fork to mash the ingredients together.
At this point, test the mixture by squeezing a ball in your hand. If it sticks together, you won't need the flax egg. If your rice was previously prepared or refrigerated, you will most likely need it.
To prepare a flax egg, combine 1 Tbl ground flax with 3 Tbl water. Place into the refrigerator for 10-15 minutes. Whisk prior to using until you get a gelatinous mixture.
Add this mixture slowly to the rice mixture, testing frequently to be sure before adding more, Less is best.
To form the burgers, I used a biscuit cutter and pressed firmly until I had an even patty and then transferred to a preheated pan with a small amount of oil.
Cook until browned and flip just once. Remember the ingredients are already cooked, so we just want to heat through and brown the burgers.
Meanwhile, whisk together the chili peanut sauce ingredients. You can omit this sauce or add/subtract ingredients to suit your personal preferences.
Serve the burger on a hard roll with butter or Boston lettuce, and top with the sauce. For garnish, you could add a few more chopped peanuts and add whatever you have on hand. I had cherry tomatoes and my favorite, dill pickles.
