These are an easy no-bake cookie. Made with cream cheese, mint extract and powdered sugar.

1/2Package Vegan Cream Cheese
1/8tspMint or Peppermint Extract
1Drop Green Food Color
2-1/4CVegan Confectioner's Sugar
Place cream cheese, mint extract and green food color in the bowl of an electric mixer. Beat on low speed for 30 seconds or until blended and smooth. Gradually add the powdered sugar and continue to mix for 2 minutes.
Using a 1" cookie scoop, drop batter directly into granulated sugar
and roll placing on a silpat or parchment lined cookie sheet
and press with the bottom of a glass to flatten slightly. Using a fork, press to make indentations and refrigerate.
Store mints in a covered container in the refrigerator. These also freeze very well, so they can be made ahead!
