Carrot Zucchini Bars with Lemon Cream Cheese Frosting
This healthy, dense cake is loaded with flavor. Topped with a fragrant lemon cream cheese frosting!

Ingredients
For the Cake:

Walnuts

For the Frosting:

vegan Cream Cheese
1
Cup
Powdered Sugar
1 ½
tsp
Lemon Zest
Instructions
Preheat oven to 350 degrees.
In a large bowl, combine eggs, brown sugar, oil, honey and vanilla. Then fold in the carrot, zucchini and walnuts.
In a separate bowl, combine the dry ingredients. Add to wet mixture. Stir until just combined and spread into a greased 13x9 baking pan.
Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.
Once cooled, prepare the frosting. Beat until fluffy on medium speed. Spread or pipe onto bars. Garnish with lemon zest if desired.
