peeled and ends trimmed

Vegan Margarine (or butter)

Goat Cheese Crumbles
or vegan alternative

Parsley
chopped, plus a sprig for garnish
FOR THE CANDIED WALNUTS:
1/4

Walnuts
1/2
tbsp
Vegan Margarine (or Butter)
1/2
tbsp
Maple Syrup
1/2
tbsp
Brown Sugar
pinch
Salt
Instructions
Preheat the oven to 400 degrees and place an oven safe baking dish onto a lined sheet pan.
Prep the carrots and place into the baking dish.
Top with vegan margarine (or butter), brown sugar, salt and pepper.
Roast for 25 minutes or until fork tender.
Combine the ingredients for the candied walnuts and remove from heat.
Top with fresh parsley, candied walnuts and crumbed goat cheese (or vegan alternative).
