To make the cookies, whisk together the flour, cocoa,
baking soda and salt.
In the bowl of an electric mixer, beat the margarine, pow-dered sugar and vanilla until smooth. Reduce speed, add flour mixture and beat until combined. Add the red color-ing and beat until well incorporated. Transfer to a lightly floured surface and knead with hands a few times. Roll in-to a log 2” in diameter. Wrap in plastic wrap and freeze for about 30 minutes or until firm enough to slice.
Meanwhile, combine all of the filling ingredients in a food processor. Preheat oven to 350 degrees. Prepare baking sheets with parchment or use a silpat to prevent sticking.
Slice dough into 1/4” disks and place 1” apart. Bake for 8-10 minutes. Let cool for a few minutes on the baking sheet and transfer to a wire rack to cool completely.
Spread the filling on the flat side of the cookie and sandwich with the remaining cookie.
