It’s that time of year again so I thought I would give you some vegan Christmas cookie recipes, starting with these Red Velvet Sandwich Cookies. But that’s not all! At the bottom of this post, you’ll find links to all 25 of my Christmas Cookie recipes from 2013.
This Red Velvet Sandwich Cookie features soft cookies with a creamy coconut filling. We used softened vegan cream cheese, powdered sugar, pure vanilla extract, coconut flakes and a pinch of salt to bring out the flavors.
The cookies are delicious by themselves. Traditionally, Red Velvet Cake is just Devil’s Food Cake tinted red with food coloring. Growing up, I always thought it was some magical concoction. Nope. Food color 😉 Oh well, it still tastes delicious! There are several companies making vegan-friendly food coloring, just do your research.
Did I mention these are slice and bake cookies? What could be easier. They bake for just 8-10 minutes and must be cooled completely or the filling will melt.
Simply spread a generous amount of the filling on one cookie and create a sandwich with the other. Simply delicious!

Red Velvet Sandwich Cookies {Vegan}
Ingredients
- FOR THE COOKIES:
- 1 C All Purpose Flour
- 1 Tbl Cocoa Powder
- 1/4 tsp Baking Soda
- Pinch of Salt
- 6 Tbl of Vegan Margarine softened
- 3/4 C Powdered Sugar
- 1/2 tsp Vanilla Extract
- 1 tsp Vegan-Friendly Red Food Coloring
- FOR THE FILLING:
- 3/4 C Shredded Coconut
- 4 oz . Vegan Cream Cheese softened
- 1/3 C Powdered Sugar
- Pinch of Salt
- 1/2 tsp Vanilla Extract
Instructions
- To make the cookies, whisk together the flour, cocoa,
- baking soda and salt.
- In the bowl of an electric mixer, beat the margarine, pow-dered sugar and vanilla until smooth. Reduce speed, add flour mixture and beat until combined. Add the red color-ing and beat until well incorporated. Transfer to a lightly floured surface and knead with hands a few times. Roll in-to a log 2” in diameter. Wrap in plastic wrap and freeze for about 30 minutes or until firm enough to slice.
- Meanwhile, combine all of the filling ingredients in a food processor. Preheat oven to 350 degrees. Prepare baking sheets with parchment or use a silpat to prevent sticking.
- Slice dough into 1/4” disks and place 1” apart. Bake for 8-10 minutes. Let cool for a few minutes on the baking sheet and transfer to a wire rack to cool completely.
- Spread the filling on the flat side of the cookie and sandwich with the remaining cookie.

Which food dye do you prefer? I’ve yet to find one that would give such a good color.

Hi Becky, I use the Americolor brand. I recently contacted them again to assure the colors are all vegan-friendly and here is their response: “Dear Aimee, Thank you for your interest in AmeriColor! Yes, our food color is vegan friendly. The only item we have that contains products derived from an animal is Meringue Powder. Meringue Powder contains powdered egg whites. On the seldom occasion that we produce Meringue Powder, as it has been discontinued, it is made in a segregated area and the equipment we use for food color is not used. I have attached our Allergen Statement for your reference as well. Please let me know if you need further assistance. Best wishes!” You can find Americolor in Walmart or on Amazon.com I used the one called ‘Red Red’ and it produces amazing results!

Have you ever tried to use this recipe for cut out cookies? I’m looking for a recipe.

Hi Bridgette, this is a soft dough and requires refrigeration to slice. That being said, you could try to partially chill the dough and try a cutout. I would chill the cutouts prior to baking as well as they may spread. I’d love to hear how it turns out if you try them 🙂 Happy holidays!!!
