Holiday Spritz Cookies {Vegan}
These are a staple in my family for Christmas. Although it does require a cookie press maker, they are quite inexpensive and ours has lasted us for years and years.
Ingredients
- 2-1/3 C All-Purpose Flour
- 1/4 tsp Salt
- 1/4 tsp Baking Powder
- 1/2 C Vegetable Shortening
- 1 C Vegan Powdered Sugar
- 1/4 C Silken Tofu blended until smooth
- 3/4 tsp Vanilla Extract
- Vegan Food Coloring. 6-8 drops of several colors
Instructions
- Preheat oven to 375 degrees.
- Whisk together the flour, salt and baking powder until well blended.
- In the bowl of an electric mixer, beat shortening and powdered sugar until light and fluffy. Add egg-replacer (in this case, silken tofu) and vanilla extract (you could also use almond extract here). Gradually add flour mixture.
- If you wish to tint the dough into different colors, divide into portions, each with its own bowl. Add 6-8 drops of food coloring and mix until completely incorporated. If you are only doing one color for the whole batch, I would recommend adding the food color to the liquid mixture prior to the flour as it will incorporate much easier.
- **If you would like to add color sanding sugar or other edible decorations, do so now before baking**
- Fit the cookie press with the desired shape plate filling according to manufacturers instructions. Press dough onto silpat or ungreased baking sheets. Bake for 6-7 minutes or unti set and just barely starting to color - not brown. This makes for a very tender cookie. Cool for about a minute or two on the cookie sheet and then transfer to a wire rack to cool completely before storing.

Hi! Love Spritz cookies, too! Wondering about the shortening and powdered sugar amounts…it never got light and fluffy for me, just crumbly. I think the amounts of shortening to sugar should be reversed, maybe?

1 C Vegan Margarine, softened
2/3 C Sugar
1 Egg-Replacer (I used 1 tbsp of Ground Flax PLUS 3 tbsp Water allow to sit until thickened – about 15 minutes)
2 tsp Vanilla
1/2 tsp Salt
2-1/2 C Flour
FOOD COLORING
DECORATIONS OF YOUR CHOOSING
Bake cookies at 400 degrees for 6-8 minutes.
