Chocolate Crackle Cookies {Vegan}
This cake-like chocolate cookie is coated with sugar and powdered sugar so that when it bakes, it crackles!
Ingredients
- 1-1/4 C Brown Sugar firmly packed, Vegan
- 1 C Vegetable Shortening
- 1 tsp Vanilla Extract
- 1/2 C Silken Tofu blended until smooth
- 2 C All-Purpose Flour
- 6 Tbl Unsweetened Cocoa Powder
- 1/2 tsp Salt
- 1/4 tsp Baking Soda
- 2/3 C Mini Vegan Chocolate Chips
- 1/3 C Sugar Vegan
- 1/2 C Powdered Sugar Vegan
Instructions
- In the bowl of an electric mixer, combine sugar, shortening and vanilla and beat on medium speed until well blended Add tofu and blend until fluffy.
- Stir together flour, cocoa, salt and baking soda.
- Gradually add shortening mixture, beating at medium speed just until blended. Stir in chocolate chips. Cover and chill for 2-3 hours until firm.
- Preheat oven to 375 degrees.
- Shape dough into 1" balls and roll first in granulated sugar and then directly into powdered sugar.
- Place on a silpat or parchment lined baking sheet about 2" apart.
- Bake for 8-10 minutes or until cookies are set. Cool 2 minutes on baking sheet and then transfer to a wire rack to cool completely.
