Thumbprint Cookies {Vegan}
A Christmas tradition in my family, the thumbprint cookie. It's a classic!
Ingredients
- 1/4 C Brown Sugar packed, Vegan
- 1/4 C Vegetable Shortening
- 1/4 C Vegan Butter such as Earth Balance
- 1/2 tsp Vanilla Extract
- 1/4 C Silken Tofu blended until smooth
- 1 C All-Purpose Flour
- 1/4 tsp Salt
- 3/4 C Finely Chopped Nuts we used Pecans
- Jam or Jelly of your choice
Instructions
- Preheat oven to 350 degrees.
- In the mixing bowl of an electric blender, combine sugar, shortening, butter, vanilla and tofu. Add flour and salt until incorporated.
- Form dough into 1" balls and roll in chopped nuts. Place about 1 inch apart on ungreased cookie sheet. Press thumb deeply in center of each. Bake about 10 minutes or until light brown. Immediately remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
- Fill thumbprints with jelly.
