Green Tea Shortbread Cookies {Vegan}
Green tea has many health benefits, but did you know you can bake with the powder as well? We incorporated it into our holiday shortbread to create these cookies.
Ingredients
- 2 C All-Purpose Flour
- 2 Tbl Green Tea Powder
- 1/2 tsp Salt
- 1/2 pound Vegan Butter such as Earth Balance
- 1/2 C Sugar
Instructions
- Sift together the flour, tea powder and salt in a small bowl and set aside.
- In an electric mixer, cream butter until fluffy. About 3-5 minutes. Add sugar and continue to beat until very light and fluffy. Be sure to scrape down the sides of the bowl occasionally.
- Add flour mixture until just incorporated and dough sticks together when you squeeze it with your fingers.
- Roll between two pieces of parchment to about a 1/4" thickness. Chill in the refrigerator until firm, about 30 minutes.
- Preheat oven to 325 degrees.
- On a silpat or parchment lined baking sheet, transfer the cut out shapes with a spatula. If the dough seems too crumbly, you can let it warm slightly.
- Bake until firm and just barely starting to color, about 15 -20 minutes.
- Cool completely. Dust the tops with powdered sugar if desired.

Came out tasting great! Only issue was that the dough felt too crumbly (I ended up molding cookies using my hands to press the dough into shapes); however this may just be user error since this was my first time making shortbread cookies which of course will be rather crumbly.

Is the green tea powder matcha or did you use green tea and grind it yourself?
