The first step is to soften the onions, carrots and celery in a small amount of oil.
I used basic seasonings here because if your kids are anything like I was as a child, they are finicky, picky eaters. A little bit of garlic powder, some herbs, salt and pepper. Feel free to improvise here and taste as you go along.
After a few minutes, I add the rest of the ingredients including the potatoes, green beans, peas, corn and canned diced tomatoes.
After the veggies are softened, I add the vegetable broth (start with 2-3 cups) and the alphabet noodles. Cook on medium high for about 9-10 minutes. Stir constantly as the noodles tend to want to stick and add more broth as needed.
