1/2Orangecut into 1/4" slices & then in half
1/2cBrown Sugar
2-3Cinnamon Sticksyou could also omit and add a pinch of cinnamon to the sugar mixture
1/4tspGround Nutmeg

Instructions
Preheat oven to 350 degrees.
Peel a 1-1/2 pound sweet potato and slice uniformly into 1/4" slices.
Layer the sweet potato slices into your oven-safe baking dish. You can use the larger ones around the outside perimeter and save the smaller pieces for the center.
In a saucepan over medium heat, melt the vegan margarine and add all remaining ingredients (including cinnamon sticks and orange slices)
Carefully pour over the arranged sweet potatoes and cover tightly with foil.
Bake covered for 35-40 minutes or until tender. I used a fork to test.
Remove the foil and cook uncovered for an additional 20 minutes or so. The edges should be caramelized and the liquid should have thickened.
Allow to cool uncovered for at least 10 minutes prior to serving. That sugar mixture is HOT!
