Preheat oven to 400 degrees and line a baking sheet with a silicone mat or parchment paper.
Wash and trim the ends of the golden beets.
Place into small squares of aluminum foil. If you'd prefer, you can wrap first in parchment and then in foil if you are opposed to foil directly contacting your beets.
Drizzle with olive oil and sprinkle with salt and pepper.
Wrap the foil packs tightly and place onto the lined baking sheet.
Roast until a fork inserts easily, about 25-35 minutes (depending on size).
Carefully unwrap (there will be a lot of steam) and allow to cool for a few minutes.
Take two paper towels and gently but firmly rub the tender skin off of the beets. It should remove easily.
Slice into wedges and season with a bit more salt, if desired. Enjoy!
