Have you ever wondered How To Make Whole Roasted Golden Beets? It’s so simple and they are incredibly delicious. I’m going to show you the simplest method of preparing them including roasting whole and THEN peeling them. It seems counter intuitive, but I promise you…you will love these. Let me show you how I make them.
How To Make Whole Roasted Golden Beets
Most grocery stores sell golden beets in a bundle of three, roots and leaves intact. They’ll need a very good rinsing. I like to use a potato scrubber to clean the beets. Don’t worry if you can’t get everything, we’ll be peeling them later on.
You don’t have to trim them, but I do to keep the ends from burning.
Place them into a piece of aluminum foil and drizzle with oil. I prefer vegetable to olive oil in this particular circumstance as it is flavorless and I like the flavor of the beets to really shine through.
Season them really well with salt and pepper and wrap the foil tightly.
Place the beets onto a lined baking sheet as the oil somehow always manages to find a crevice to leak out of.
Roast until a fork inserts easily and they are all of equal tenderness. The beets are generally not all the same size, so some might take a bit more time than others.
Carefully open the foil avoiding the hot steam and allow the beets to cool slightly. You need to be able to handle them but you also do not want them cold for ease of peeling that skin off.
Taking two paper towels, slowly and gently rub that tender skin away and discard.
Now that your beets are peeled, you can allow them to cool and store for later or slice and enjoy.
Here’s what they look like quartered. They are best enjoyed with vegan butter and a bit more salt and pepper. They are SO good.

How To Make Whole Roasted Golden Beets
Ingredients
- 3 large Golden Beets washed and ends trimmed
- 1 tbsp Olive Oil
- 1/4 tsp Salt plus more for serving
- 1/8 tsp Pepper
Instructions
- Preheat oven to 400 degrees and line a baking sheet with a silicone mat or parchment paper.
- Wash and trim the ends of the golden beets.
- Place into small squares of aluminum foil. If you'd prefer, you can wrap first in parchment and then in foil if you are opposed to foil directly contacting your beets.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Wrap the foil packs tightly and place onto the lined baking sheet.
- Roast until a fork inserts easily, about 25-35 minutes (depending on size).
- Carefully unwrap (there will be a lot of steam) and allow to cool for a few minutes.
- Take two paper towels and gently but firmly rub the tender skin off of the beets. It should remove easily.
- Slice into wedges and season with a bit more salt, if desired. Enjoy!
