White Rice
cooked according to package instructions

Cream of Mushroom Soup

Mixed Frozen Vegetables

Instructions
Cook 1 cup of white rice to package instructions.
Steam the cauliflower.
Add onion to olive oil and cook for one minute, then add the frozen mixed vegetables. Saute until warmed and tender.
Add veggies, cauliflower and mushroom soup to the rice with half of the cheeses and parsley. Mix well to combine.
Transfer mixture to an 8x8 baking dish prepared with cooking spray.
Top with remaining cheeses and parsley.
Bake for 10-15 minutes at 400 degrees, until cheese is bubbly and golden.
