This Easy Vegetable Rice Casserole Recipe is so incredibly tasty! This one is vegetarian but you can definitely veganize it simply by substituting the cheese with a vegan alternative. Loaded with mixed veggies such as cauliflower (you could substitute broccoli), carrots, onion, green beans, peas and corn, this rice dish is covered in cheese. Let me show you how to make it.

Ingredients you’ll need to make this recipe
To make this recipe, you’ll need:
- Cooked White Rice
- Olive Oil
- Onion
- Salt
- Pepper
- Cream of Mushroom Soup
- Steamed Cauliflower (or Broccoli)
- Frozen Mixed Vegetables
- Diced Onion
- Chopped Parsley
- Cheeses, such as Cheddar (or vegan alternative)
- and Parmesan (or vegan alternative)

How to make Easy Vegetable Rice Casserole Recipe
You’ll need to prep a few ingredients such as the steamed cauliflower. Broccoli would also be a great alternative or addition.

You’ll also want to prep your white rice. I actually did mine the day before and just warmed it in the microwave for a minute before assembling the casserole.

I am using Cream of Mushroom soup and there are plenty of vegan alternatives, so don’t stress.

I sauteed the onion and frozen mixed veggies in olive oil.

Add everything together and mix well with the half of the cheeses.

Add the mixture to a greased baking dish.

Top with the remaining cheeses.

Bake at 400 degrees until golden and bubbly. Keep in mind that vegan cheeses do not melt the same, so keep an eye on things so it doesn’t get too browned.

Easy Vegetable Rice Casserole Recipe
Ingredients
- 1 c White Rice cooked according to package instructions
- 1 can Cream of Mushroom Soup
- 1/2 medium Onion diced
- 1/2 bag Mixed Frozen Vegetables
- 2 tbsp Fresh Parsley chopped
- 1 c Parmesan Cheese or VEGAN ALTERNATIVE
- 1 c Cheddar Cheese or VEGAN ALTERNATIVE
- 2 tbsp Olive Oil
- 1/2 tsp Salt
- 1/4 tsp Pepper
Instructions
- Cook 1 cup of white rice to package instructions.
- Steam the cauliflower.
- Add onion to olive oil and cook for one minute, then add the frozen mixed vegetables. Saute until warmed and tender.
- Add veggies, cauliflower and mushroom soup to the rice with half of the cheeses and parsley. Mix well to combine.
- Transfer mixture to an 8x8 baking dish prepared with cooking spray.
- Top with remaining cheeses and parsley.
- Bake for 10-15 minutes at 400 degrees, until cheese is bubbly and golden.
