1/4cShredded Cheese
Sour Cream OR Vegan Sour Cream
Salsamild, medium or hot
Green Onions/Scallionsfor garnish
Instructions
Place margarine in a non-stick skillet over medium heat to melt.
Add a tortilla and top with cheese, taking care to maintain a border so the cheese does not ooze out. Place the second tortilla on top and give a light press.
Allow to cook for a few minutes, then flip. Give another press once it starts to puff up. Flip once more for just a minute or two. Both sides should be golden and crisp.
Remove to a cutting board, allowing to cool for a minute or two. Cut into wedges and serve warm with sour cream and salsa. Garnish with green onions, if desired.
