These Easy Cheesy Vegetarian Quesadillas with Salsa are one of my favorite all time go-to snacks! We make them all of the time in our home. Sometimes using vegan cheese and sour cream, sometimes vegetarian. The choice is yours. Vegan cheese tends to melt a little less well however, so keep that in mind. Let me show you how to make them.
Ingredients needed to make my Easy Cheesy Vegetarian Quesadillas with Salsa
To make this recipe, you will need the following ingredients. They include:
- Soft Tortillas
- Any type of cheese you like, we used Sharp Cheddar today but a Mexican blend works great. Pretty much any shredded cheese will work here.
- Salsa, we chose mild but if you can take the heat, go for it! ๐
- Sour Cream
- Butter for pan frying
- and Green Onions, for garnish
The first step is to lay an even layer of cheese over the first tortilla, taking care to maintain a good border or the cheese will just ooze out all over the place.
Place that into a non stick skillet with your melted butter and place the second tortilla on top. Allow the first side to cook for a few minutes.
Flip and you should have sort of a light golden brown on that first side. Don’t worry, we’ll be flipping it one more time. At this point, you may notice the heat puffing up the tortillas and you will want to take a spatula to press that down. Now, it’s time to do that second flip, cook for another minute or two and remove to a cutting board.
So here is our toasty and crispy quesadilla. Since that cheese is really hot, I would recommend waiting just a minute or two before cutting into wedges.
Serve the wedges with sour cream and salsa. If you have guacamole, that would also be a great option for dipping.

Easy Cheesy Vegetarian Quesadillas with Salsa
Ingredients
- 2 Soft Flour Tortillas
- 1 tbsp Butter, Margarine OR Vegan Margarine melted in a non stick skillet
- 1/4 c Shredded Cheese
- Sour Cream OR Vegan Sour Cream
- Salsa mild, medium or hot
- Green Onions/Scallions for garnish
Instructions
- Place margarine in a non-stick skillet over medium heat to melt.
- Add a tortilla and top with cheese, taking care to maintain a border so the cheese does not ooze out. Place the second tortilla on top and give a light press.
- Allow to cook for a few minutes, then flip. Give another press once it starts to puff up. Flip once more for just a minute or two. Both sides should be golden and crisp.
- Remove to a cutting board, allowing to cool for a minute or two. Cut into wedges and serve warm with sour cream and salsa. Garnish with green onions, if desired.
