This Easy Vegetarian Broccoli Cheddar Casserole uses frozen and defrosted broccoli and a can of creamy condensed soup. This one bowl, one pan recipe bakes in just about 30 minutes and that Ritz Cracker topping bakes to a crisp perfection. Let me show you how to make it.
Ingredients needed to make this recipe
To make this recipe, you will need the following ingredients. They include:
- Frozen and defrosted broccoli florets, I do not pre-cook these
- Cream of mushroom soup
- Sour Cream (or vegan alternative)
- Shredded cheddar cheese (or vegan alternative)
- Salt, to taste
- Black Pepper, to taste
- Crushed RITZ Crackers
- Melted Margarine (or vegan alternative)
How to make Easy Vegetarian Broccoli Cheddar Casserole
Combine all of the ingredients together in a large bowl.
Be sure to mix really well. The consistency should look like this.
Place the mixture into an 8″ square pan that you have prepared with cooking spray.
Crush the crackers and melt the butter.
Spread the crackers over the mixture and sprinkle the melted vegan margarine over top. I used about 2 tablespoons of melted margarine, but three would be preferable if you are not opposed to that much.
Bake until golden. The cheese should be melted and bubbling. Also be sure to test the broccoli for done-ness. Remember, we did not pre-cook the broccoli beforehand.

Easy Vegetarian Broccoli Cheddar Casserole
Ingredients
- 1 bag Frozen and defrosted broccoli florets
- 1 can Cream of mushroom soup
- 1/2 c Sour Cream or vegan alternative
- 3/4 c Shredded cheddar cheese or vegan alternative
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 3/4 c Crushed RITZ Crackers
- 2 tbsp Melted Margarine or vegan alternative
Instructions
- Preheat oven to 350 degrees and coat an 8" oven safe baking dish with cooking spray.
- In a medium bowl, combine all of the ingredients except the crackers and margarine. Mix well to combine.
- Top with crushed crackers and finally, the melted margarine.
- Bake for 35 minutes or until golden and bubbly.
- Serve hot.
