What could be more refreshing on a hot day than a frozen Coconut Lime Smoothie? Just three ingredients make up this drink. We used So Delicious brand Vanilla Bean Coconut Frozen Dessert, So Delicious Coconut Milk and lime juice. It’s really that simple!
First off, we thawed the vanilla bean frozen dessert slightly and added it to the blender along with lime juice and coconut milk. You might prefer a bit more lime juice, so I suggest tasting it prior to serving.
We made ours a little thick (think milkshake consistency), but you could add more coconut milk to thin it out which would also provide you with additional servings. One pint of the ice cream makes about four 1/2 cup servings if you double the coconut milk or two 1 cup servings as we did here. If you choose to alter the recipe in this way, I would increase the lime juice as well so you don’t lose that flavor. Adjust to taste.

Coconut Lime Smoothie {Vegan}
Ingredients
- 1 pint So Delicious Coconut Milk Vanilla Bean Frozen Dessert
- 3/4 C So Delicious Coconut Milk
- Juice of 1 to 2 Limes depending on size, it should equal about 3 Tbl
- Lime Zest for garnish
Instructions
- Allow the Vanilla Bean Frozen Dessert to thaw slightly.
- In a blender, combine all ingredients and blend.
- Pour into chilled glasses and garnish with lime curls or zest.
- Serve immediately.
- **You can add up to an additional 3/4 C of Coconut Milk plus another 1 to 1-1/2 Tbl of Lime Juice (to taste) to make four 1/2 C servings**
