This Roasted Carrots with Candied Walnuts and Goat Cheese is vegetarian but easily converted to vegan. Simply swap out the goat cheese for a crumbly vegan alternative. The carrots are roasted in brown sugar and are caramelized and delicious. A few caramelized walnuts (or pecans, if you prefer) and a sprinkling of parsley. The perfect side dish. How to make Roasted Carrots with Candied Walnuts and Goat Cheese
The first step is to peel your carrots and try to choose some that are the same size. This ensures they will all cook at the same rate. I do trim the ends, but if you prefer the aesthetic, you can leave them on.

Add to an oven-safe baking dish and top with brown sugar and butter (vegan or traditional). Season with plenty of salt and pepper.

Roast uncovered at 400 degrees until fork tender. As you can see, there is some splatter. I prefer not to cover with foil because then they’ll steam and not roast. You could simply place this baking dish onto a lined cookie sheet to catch those splatter.

How to make the candied walnuts
While the carrots are roasting, let’s make the caramelized walnuts. Pecans are also great here if you prefer them. Add vegan margarine, maple syrup and brown sugar to a non-stick pan with the nuts over medium heat stirring occasionally.

Remove from the heat when the sauce is golden and bubbly. That sugar mixture is HOT, so be careful.

Top with chopped parsley and don’t forget a sprig for garnish.

Top with the candied walnuts.

Lastly, add the crumbled goat cheese. Serve warm.

Roasted Carrots with Candied Walnuts and Goat Cheese
Ingredients
- 6 large Carrots peeled and ends trimmed
- 2 tbsp Brown Sugar
- 2 tbsp Vegan Margarine (or butter)
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 ounce Goat Cheese Crumbles or vegan alternative
- 1 tsp Parsley chopped, plus a sprig for garnish
FOR THE CANDIED WALNUTS:
- 1/4 c Walnuts
- 1/2 tbsp Vegan Margarine (or Butter)
- 1/2 tbsp Maple Syrup
- 1/2 tbsp Brown Sugar
- pinch Salt
Instructions
- Preheat the oven to 400 degrees and place an oven safe baking dish onto a lined sheet pan.
- Prep the carrots and place into the baking dish.
- Top with vegan margarine (or butter), brown sugar, salt and pepper.
- Roast for 25 minutes or until fork tender.
- Combine the ingredients for the candied walnuts and remove from heat.
- Top with fresh parsley, candied walnuts and crumbed goat cheese (or vegan alternative).
