My Grandmother's Dutch Apple Cake {Vegan}
This simple, yet delicious cake comes from an old recipe card of my grandmother that I veganized. Like most grandparents who baked for their families, the card listed only ingredients ... and no instructions ๐ Luckily, this one is really easy. Slices of apple tucked into dough and topped with cinnamon sugar. So good served warm with a vegan vanilla ice cream.
Ingredients
- 2 C All-Purpose Flour
- 3 tsp Baking Powder
- 1/2 tsp Salt
- 1/4 C Sugar
- 4 Tbl Vegetable Shortening
- 1/4 C Applesauce
- 2/3 C Almond Milk
- FOR THE FILLING:
- 4 small or 3 medium baking apples peeled, cored & sliced
- FOR THE TOPPING:
- 2 Tbl Sugar
- 1 tsp Cinnamon
Instructions
- Preheat oven to 375 degrees.
- Prepare an 8x8 baking pan with cooking spray.
- Mix together the flour, baking powder, salt and sugar. Add the shortening,applesauce and milk and mix until just combined. Do not overmix.
- Spread into the prepared pan.
- Prepare the apples by peeling, coring and slicing
- and place them round side up deep into the dough. The dough will puff up substantially during baking, so get them down into the dough at this point.
- Sprinkle with the cinnamon sugar mixture.
- Bake for 35 minutes or until a toothpick inserted comes clean. Cool slightly before serving.

Great recipe! I made a couple subtitutions: 4 tbsp Shortening = 2 tbsp liquid coconut oil; 1 cup sugar = 1 tbsp Stevia & 1/4 c Applesauce = 1/3 cup applesauce as I used my own mix of gluten-free flour and it has Coconut flour. I also split the recipe in two and made two different variations in banana bread pans – 1 as an upsidedown cake, placing the apples, cinnamon and a tiny bit of Stevia at the bottom and pushing 1/2 of the cake batter on top and the other one as the traditional recipe. Success, but would make a double recipe next time and probably use a bit more applesauce. Only baked for 25 minutes.

Hi, tried this ‘s out today. Put a heaped 1/4 cup of sugar in the batter and cooked it for 10-15 minutes more than the prescribed time because it did not seem as brown as yours and the tester knife came out with some’ paste’ on it. Loved the recipe. Give it five stars and would most definitely make it again. Thanks for sharing.
