Orange Glazed Cranberry Scones {Vegan}

Ingredients
- FOR THE SCONES:
- 1 C All-Purpose Flour
- 1/2 tsp Baking Powder
- 1/8 C vegan Margarine such as Earth Balance (chilled & cut into cubes)
- 1/4 C Dried Cranberries OR 3/4 C fresh/frozen
- 1/8 C Applesauce unsweetened
- 1/8-1/4 C Almond Milk
- 1/4 tsp Salt
- FOR THE WASH:
- Almond Milk
- 1 Tbl vegan Sugar for sprinkling
- FOR THE GLAZE:
- 1/8 C vegan Confectioner's Sugar
- 3/4 tsp fresh Orange Juice
- Orange Zest
Instructions
- Preheat oven to 400 degrees.
- In the bowl of an electric mixer, combine the flour, baking powder and salt.
- Add the cut margarine until it is a coarse texture.
- Add the applesauce and milk until a sticky dough forms (note: you may need as little as 1/8 C to as much as 1/4 C to achieve this).
- Fold in the cranberries. If using fresh or frozen, be gentle with this as you do not want to discolor your dough.
- Turn the dough out onto a floured surface and roll to 1" thick. At this point, you can cut into triangles or using a cookie or biscuit cutter, cut into rounds.
- Place on a silpat or parchment lined baking sheet and brush the tops with the almond milk and sprinkle with sugar.
- Bake for 12-15 minutes or until edges are slightly golden.
- Cool completely.
- Mix together the confectioner's sugar, orange juice and orange zest.
- Dip the tops of the rounds, letting some drizzle over the edges. Garnish with more zest, if desired.

Wow, these look so good. I’m going to try these! I have had such bad luck with vegan scones so hopefully these will be turnaround scones for me. I’ll let you know how they turn out.
