I have fond memories of these Old Fashioned Soft Molasses Cookies growing up. Archway used to make one that has since been discontinued I believe, and they were my favorites. When I would visit my grandma, she would butter the underside of them and cut them into wedges or heart-shapes for me. Sometimes I’d even get to drink real tea with her, a little “cream” and sugar to sweeten things up. We’d play tea party a lot and while I was eating, she would make ballerina paper doll cut outs for me. You know, the kind where they are all strung together? 🙂
Today, I created a vegan version of that beloved cookie and used Earth Balance Buttery Spread. Served with that, Celestial Seasonings Sweet Harvest Pumpkin Black Tea with a splash of almond milk. If you’d like it sweeter, use Agave or Stevia.
I rolled these to 1/4″ but next time, I think I’d choose to roll to 1/2″ thick for a softer, puffier cookie – more like the one I remember. The flower cookie cutter is from Wilton and you can get it here on Amazon.com

Old Fashioned Soft Molasses Cookies {Vegan}
Ingredients
- 2-1/2 C All Purpose Flour
- 1 tsp Baking Soda
- 1/2 tsp Cinnamon
- 1/2 tsp Ginger
- 1/4 tsp Salt
- 1/2 C Vegetable Shortening such as Spectrum Naturals or Earth Balance Baking Sticks
- 1/2 C Brown Sugar packed
- 1/2 C Molasses
- 1 tbsp ground Flax Seeds mixed with 3 tbsp Water place refrigerator 15-30 minutes
- 1 tbsp Water
- 1 tbsp Apple Cider Vinegar
- Coarse vegan sugar for sprinkling
Instructions
- Preheat oven to 375 degrees.
- In the bowl of an electric mixer, place all of the ingredients and mix until combined.
- On a floured surface, roll dough to either 1/4" or 1/2" thick. I did the 1/4" but would definitely do 1/2" thick next time to be more like the original.
- Place cutouts on a parchment or Silpat lined baking sheet.
- Sprinkle with coarse vegan sugar, if desired.
- Bake for 7-10 minutes (based on thickness). The edges should just start to firm up. Allow to cool for 2 minutes on the cookie sheet and remove to a rack to cool.
- Serve with vegan margarine and a cup of your favorite tea.

I must admit, it is a perk 😉 I just checked out your website and am very impressed with the ice skating! At age 38, I went back to ballet and got en pointe after a million years. I didn’t keep up with it however, but I still toy with the idea of training again. You inspire me 🙂
