I love traditional oatmeal raisin cookies, but these Old Fashioned Chewy Oatmeal Cookies are by far my new favorite! They are slightly crisp on the exterior, tender and chewy on the interior. I love reheating them in the microwave for a few seconds and enjoying them with a cup of hot tea – I am definitely a warm cookie eater ๐
How to make Old Fashioned Chewy Oatmeal Cookies
I like to begin with creaming the vegan margarine and sugars together in the bowl of an electric mixer until smooth.
Add vanilla and unsweetened applesauce (my egg-replacer of choice for this recipe).
Make sure everything gets well combined before proceeding.
In a small bowl, whisk together your dry ingredients.
Incorporate the two in an electric (or hand) mixer. The beater breaks up some of the oats making for a really nice textured cookie.
Can I freeze the cookie dough?
Yes! Absolutely and because we aren’t using an egg, the dough freezes beautifully. I would highly recommend proceeding with the scooping as shown below, freeze them on the sheet pan and then place the frozen balls into a freezer bag. Just remove them when you are ready and bake!
Using an ice cream or cookie scoop, place mounds of the dough onto a parchment lined baking sheet. I make mine large, but you can make them any size you’d like.
Using the base of a glass that you have sprayed with baking spray, give them a light press. This is really only necessary if you make larger cookies.
This recipe makes quite a bit of dough, so I used half to make a few trays of small oatmeal raisin cookies for my mom.
For me, the larger oatmeal cookies. These have entered my top 10 favorite cookie list! You could even opt to add a layer of powdered sugar glaze to these if you really want to kick it up a notch.
