You will love this simple Tomato Corn Salsa Recipe with Avocado dip! Full of fresh veggies, this is an easy appetizer you can throw together in just minutes.
It begins with diced tomatoes…
Diced red onions…
Fresh corn right off of the cob…
A little bit of jalapeno (to taste)…
Diced red pepper…
And last, but certainly not least, diced avocado.
Toss with freshly chopped parsley (or cilantro if you are a fan – sadly, I am not).
Quick and colorful, all that’s left is to place it in a serving bowl.
With your favorite chips of course. Mine are currently these blue corn and flax tortilla chips from Target. SO good!

Tomato Corn Salsa Recipe with Avocado
Ingredients
- 4 Tomatoes diced
- 1/2 c Corn
- 2 tbsp Red Onion diced
- 2 tbsp Parsley (or Cilantro) chopped
- 2 tbsp Red Pepper diced
- 1 Jalapeno finely diced, to taste
- Salt
- Pepper
- 1 squeeze Lime Juice
- Tortilla Chips for serving
Instructions
- Boil and cool the corn on the cob. Using a sharp knife, remove the kernels.
- Prep all of the vegetables except the avocado and toss together.
- At the last minute, dice the avocado and give a squeeze of lime.
- Toss in some freshly chopped parsley (or cilantro) and serve immediately.
