You don’t need to be hosting a party to enjoy these savory Vegan Puff Pastry Wrapped Asparagus. So incredibly simple to prepare, but they look oh-so-fancy, don’t they? You can choose any dipping sauce you’d like, but I chose honey mustard and I’ll give you that recipe below as well. Let me show you how I made them.

A word about puff pastry…
I’m using store bought puff pastry which is, by nature, “accidentally vegan”. Almost all commercial brands are, but always check the ingredients to be sure. You’ll need to thaw according to package directions and pay attention if you live in an especially warm climate (as I do). Things need to move quickly so the dough doesn’t get too soft.

How to make my Vegan Puff Pastry Wrapped Asparagus
While that’s happening, I washed, trimmed and thoroughly dried my asparagus. This recipe works best with medium thickness asparagus, but this week I could unfortunately only find a thinner variety. They were still delicious!

On a lightly floured surface, roll your puff pastry sheet slightly and cut into strips as I have show you here. Wrap the asparagus with one strip, pinching to seal at either end and leaving a bit of space between each rotation so you get that spiral effect.

Brush with melted vegan margarine and sprinkle with salt, pepper and white sesame seeds.

The reason I prefer a larger asparagus spear is that these smaller spears bake up fast and the puff pastry needs time to get golden. These worked perfectly though.

This is my homemade honey mustard dipping sauce. It’s a classic and if you do not consume honey, there are vegan honey options on Amazon and/or you could always use agave syrup for the same result.

Vegan Puff Pastry Wrapped Asparagus
Ingredients
FOR THE ASPARAGUS:
- 1 package Vegan Puff Pastry most commercial brands are
- 1 bunch Asparagus Spears medium to thick spears
- 3 tbsp Vegan Margarine melted
- Salt
- Pepper
- Sesame Seeds
FOR THE HONEY MUSTARD DIPPING SAUCE:
- 1/3 c Vegan Mayonnaise
- 2 tbsp Dijon Mustard
- 2 tbsp Honey or Agave Syrup
- 1 tsp Yellow Mustard
- 1 tsp Lemon Juice
- pinch Salt
Instructions
- Preheat oven to 350 degrees.
- Thaw the puff pastry according to package instructions.
- Wash, trim and thoroughly dry the asparagus.
- On a lightly floured surface, roll the puff pastry and cut into strips. Wrap each asparagus spear with one strip, pinch the dough to secure at either end.
- Brush the puff pastry with melted vegan margarine and sprinkle with salt, pepper and white sesame seeds.
- Bake until golden and the asparagus is tender, about 20 minutes depending on the size.
- Meanwhile, whisk together the ingredients for the honey mustard dipping sauce and refrigerate until ready to use.
- Serve warm!
