This Baked Apple Cinnamon Oatmeal is one my new all time favorite breakfasts. It’s almost a dessert! The base of the dish is covered in cinnamon apples and topped with the oatmeal mixture. It bakes firm and topped with maple syrup, is utterly delicious. Let me show you how I make it.
Ingredients you’ll need to make this recipe
- Old Fashioned Oats (not quick cooking or instant oats)
- Ground Cinammon, for both the apples and the oats
- Ground Cloves, just a pinch
- Lemon Juice, to keep the apples from oxidizing
- 1/2 of a large apple, peeled, cored and sliced into wedges. You could also dice the apples.
- Pure Vanilla Extract
- Pinch of Salt
- Baking Powder
- Non-Dairy Milk of your choosing
- Unsweetened Applesauce (or another egg-replacer or your choosing)
How to make Baked Apple Cinnamon Oatmeal
Toss the apples with the lemon juice to both give a bit of moisture and to prevent them from turning brown after peeling, ground cinnamon and a pinch of ground cloves. Arrange in the bottom of your baking dish.
This recipe is a serving for one, but you can definitely double or quadruple it if you’d like.
Mix together the wet ingredients in a medium bowl along with the oats. Make sure everything is well combined.
Pour over the apples and place the baking dish onto a lined baking sheet. This is just added insurance in case it bubbles over. Mine did not.
You’ll know it’s done when it is golden and firm. Test it as you would a cake. Allow to cool slightly.
I served mine simple with just pancake or maple syrup but you could also dust with powdered sugar or eat it as is. The options are endless 🙂

Baked Apple Cinnamon Oatmeal
Ingredients
APPLE MIXTURE:
- 1/2 large Apple diced
- 3/4 tsp Lemon Juice
- 1/8 tsp Ground Cinnamon
- pinch Ground Cloves
OATMEAL MIXTURE:
- 2 tbsp Unsweetened Applesauce
- 3 tbsp Maple Syrup or Pancake Syrup
- 3/4 tsp Vanilla Extract
- 1/2 c Old Fashioned Oats
- 3 tbsp Non-Dairy Milk or Vegan Yogurt/Sour Cream
- pinch Salt
- pinch Baking Powder
- pinch Cinnamon
FOR TOPPING:
- Maple or Pancake Syruip
Instructions
- Preheat oven to 375 degrees and line a sheet pan to place the baking dish on. This is just to ensure there is no overflow.
- Toss apple ingredients together. Place into the bottom of a greased baking dish, This recipe is for one, but feel free to double or tripe the recipe for a larger batch.
- Combine the oatmeal mixture and spoon over the top of the apples. Place the dish onto the lined baking sheet.
- Bake for about 20-25 minutes or until golden and set. This will depend on your oven and how large your dish is. Check often as the oats could burn.
- Cool slightly before serving and top with maple or pancake syrup, if desired.
