One of my absolute favorite appetizers are these Easy Spinach Stuffed Mushrooms. I have made them vegetarian, but veganizing them is super easy. Vegan cream cheese is so similar in texture to the original and the parmesan is also very easy to find in just about any supermarket these days. These are just delicious. Let me show you how I make them.

Ingredients needed to make this recipe
To make this recipe, you’ll need:
- Baby Portabella Mushrooms
- Softened Cream Cheese (or vegan alternative)
- Canned Leaf Spinach, drained and squeezed dry
- Parmesan (or vegan alternative)
- Salt
- Pepper
- Panko Bread Crumbs
- Melted Vegan Margarine
- Baking Spray

How to make Easy Spinach Stuffed Mushrooms
I want to mention that you can certainly use frozen and defrosted spinach but this is the first time I have tried using canned and it was not only so easy, but incredibly taste.

Combine all of the filling ingredients together.

Prep the mushrooms by removing the stems and wiping them clean with a paper towel.
Using a small scoop or a spoon, divide the filling evenly between the mushroom caps.

Combine the panko bread crumbs, parmesan and melted vegan margarine to form the topping.

Press the topping on to the spinach filling.

Bake at 350 degrees until the mushrooms are tender and the topping is golden.

Easy Spinach Stuffed Mushrooms
Ingredients
- 6 medium Baby Bella Mushrooms stems removed and wiped clean
- 4 oz Cream Cheese or VEGAN ALTERNATIVE
- 1/2 can Spinach drained and squeezed
- 1/2 c Parmesan or VEGAN ALTERNATIVE
- 1/4 c Panko Breadcrumbs
- 2 tbsp Vegan Margarine melted
- Salt and Pepper to taste
Instructions
- Preheat oven to 350 degrees.
- Prep the mushrooms by removing the stems and wiping them clean. Place into a baking dish prepared with cooking spray.
- Combine the filling ingredients and using a small scoop, stuff the mushrooms.
- Combine the topping ingredients and press onto the spinach mixture.
- Bake for 20-25 minutes or until the mushrooms are tender and the tops are golden.
