Buffalo Cauliflower Pizza {Vegan}
The vegan version of Buffalo wings made with cauliflower, a sweet and tangy sauce, vegan bleu cheese and ranch dressings. This focaccia dough is my "go to" for pizzas. It rises beautifully and is soft yet chewy.

Ingredients
- For the Pizza crust:
- 3/4 C Warm Water
- 2 Tbl Vegetable Oil
- 2 C Bread Flour
- 1 Tbl Sugar
- 1 tsp Salt
- 1-1/2 tsp Bread Machine Yeast

- 1 Head of Cauliflower
- *****
- Vegan Follow Your Heart™ Ranch Dressing
- *****
- For the Bleu Cheese:
- Vegan Follow Your Heart ™ High Omega Bleu Cheese Dressing
- Extra Firm Tofu crumbled into small pieces

- For the Batter:
- Vegan Buttermilk 1 Tbl White Vinegar + 1 C Almond Milk – Let set 5-10 minutes to curdle and thicken
- ½ C All-Purpose Flour
- ¼ tsp Garlic Powder

- For the Sauce:
- ½ C Frank’s Red Hot™ Buffalo Wings Sauce
- 2 Tbl vegan Margarine such as Earth Balance
- 1 Tbl vegan Sugar
- 1 Tbl Water
Instructions
- Place the crust ingredients into a bread machine in the order listed. Use the dough cycle. If you don't have a bread machine, you can use an electric mixer with a dough hook to knead it.
- Once the dough cycle is complete, lightly spray the pan and coat the dough so that it doesn't dry out. Cover with a towl and let rest for 10 minutes in a warm place. The dough is too elastic at this point to press into the pan. After 10 minutes, it should be more relaxed and you can form your crust. Let rise in a warm place, covered, for 30 minutes.
- Mid-way through, form the dough again so that it is not too puffy in the middle and make indentations with your fingertips so that the filling has somewhere to go.
- To prepare the cauliflower, preheat oven to 375 degrees.
- Whisk together the buttermilk mixture
- and let sit for 5-10 minutes. Curdled is what we are going for. Add to the flour and garlic powder and whisk until a smooth batter forms.
- Toss the cauliflower florets to coat, removing any excess batter (a slotted spoon really helps here) and place on a greased baking dish. Bake for 15-20 minutes, or until beginning to get tender and slightly golden.
- Meanwhile, mix together the sauce ingredients in a small saucepan to dissolve the butter and sugar
- and drizzle over the cauliflower, gently tossing to evenly coat.
- Bake for another 5-10 minutes or so. They will finish cooking on the pizza.
- To assemble the pizza, spread the blue cheese mixture evenly over the unbaked crust.
- Then place the par-baked cauliflower around the dough.
- Bake for 15 minutes or until the crust is completely baked.
- Drizzle the top with vegan Ranch dressing and serve celery sticks alongside.
