While I am sure most vegans know all about banana “nice” cream, this one offers a bit of a twist. For those unfamiliar, banana nice cream is made from sliced, frozen bananas and flavorings of your choosing. Using a high-speed blender, those frozen bananas turn into a lovely soft-serve ice cream consistency.
Today I chose to add blueberries. But not just any blueberries. ROASTED blueberries. I first line a baking sheet with foil and roast the blueberries at 400 degrees for about 12-15 minutes, or until the berries soften and produce juice.
I love my Breville Mini Smart Oven so much, I can’t even tell you. Living in Arizona, there are few days when you really want to preheat a standard oven. This is my go-to for cooking everything from sweet potatoes, toasting bagels, baking oatmeal and roasting asparagus. Here’s a link if you are interested in learning more about Breville Smart Ovens. And 12-15 minutes later, this is what you end up with. Allow to cool before using. We’ll be using both berries and their juices for this recipe. And by the way, I’m not big on using foil but don’t skip this step or that juice will be everywhere.
Depending on the sweetness of the fruit you use, you may choose to add sweetener. I used a bit of agave nectar though I probably could have done without.
If you are using a food processor, just pour everything into a loaf pan and freeze for a few hours until it’s scoopable.
If you are using a high-speed blender, it will come out as a smooth, soft-serve consistency and it’s ready to eat! If you prefer, you can also freeze for a more scoopable ice cream.
I tend to like the consistency somewhere in the middle. Still soft, but scoopable. It’s a really refreshing dessert that is actually GOOD for you!

Blueberry Banana Ice Cream {Vegan}
Ingredients
- 1 C Frozen or Fresh Blueberries
- 1 Tbl of Agave Nectar or sweetener of choice
- 3 handfuls Sliced Frozen Bananas this measurement doesn' need to be exact
Instructions
- Preheat oven (or toaster oven) to 400 degrees.
- Line a baking sheet with foil. You'll want to be sure you have enough to cover and come up the sides to avoid run off.
- I added frozen berries straight from the freezer, but fresh will take less time.
- I baked mine for about 15 minutes total, or until they become softened and juices release.
- Allow to cool for a few minutes.
- Meanwhile, add 3 handfuls of sliced, frozen bananas to the bowl of a food processor. Of course, if you have a Vitamix or other high-speed blender, you can do the entire recipe in there.
- Process until smooth. In a food processor, the frozen bananas look like small ice crystals.
- Add the cooled blueberries and juices.
- At this point, you can add agave, Stevia or other sweetener of your choosing.
- From the food processor, place into a loaf pan for at least a few hours and it's ready to scoop.
- If using a high-speed blender, you'll get a smooth, soft-serve consistency that is ready to eat.
- Either way you prepare it, you'll love this vegan Blueberry Banana Ice Cream!

Wow! Minus the agave nectar, this is LITERALLY a baby food recipe we make for our son. We roast the blueberries and the banana in the oven, blend it up, and freeze the result in ice cube trays.
LOL. I see nothing wrong with it. His homemade baby food is delicious. Now I don’t have to be jealous anymore!

Genius!! I love how you don’t need to churn it. I always get so frustrated when I see recipes that call for an ice-cream maker because I don’t have one! This looks like the perfect dessert for summer cook-outs 🙂
